Saison Rum expression resulting from a meticulous selection made from distillates from 3 distinct terroirs in the Caribbean islands of Barbados, Trinidad and Jamaica.
With this rum the Cellar Master wanted to highlight the typicality of these terroirs in perfect balance. All this thanks to the richness and power of the distillation of molasses in stills.
Nevertheless associated with the finesse and lightness of the distillation of sugar cane in columns.
The selected rums that make up Saison Rum have mainly aged for up to 5 years in American white oak barrels.
Aging takes place in their original terroirs, taking advantage of the heat and specific humidity of the Caribbean islands.
Offering the future rum, in particular, a unique oxidation, excellent maturity as well as a high concentration of aromas.
Then the different batches of aged rum travel across the ocean to France to then be assembled by Cellar Master Jérôme Tessendier.
His goal in creating Saison Rum, a unique harmony using the methods of producing cognac. By assembling the different terroirs according to their diverse aromatic profiles: floral, fruity and spicy.
The blend is put in old French oak barrels located on the banks of the Charente for 9 months.
This refining will ensure stability and balance while providing a note of rancio, characteristic of old cognacs.
Saison Rum then gradually reduced to 42%; without added sugar.
