In order to produce a gin with a unique character, Daniel Szor, director of Cotswolds Distillery, called on a botanical expert to choose the best ingredients. Nine botanicals were selected, including in addition to the classic juniper berries, angelica and coriander, local lavender, pink grapefruit or even fresh lemon zest, as well as cardamom and black pepper. Made from a wheat-based alcohol infused with a very large quantity of aromatics, around 10 times more than average, this gin is distilled slowly in copper pot stills. Very rich in essential oils, it is extremely aromatic and becomes cloudy when served chilled with ice or tonic.
