Saison Triple Cask Trinidad 7 years old expression resulting from a meticulous selection of distillates from the unique terroir of the island of Trinidad.
The goal of the Cellar Master is to highlight the originality of this terroir in perfect balance. Thanks in particular to the richness and power of the distillation of molasses in stills, combined with the finesse and lightness of the distillation of sugar cane in columns.
A version limited to 1476 bottles.
The rums selected for Saison Triple Cask Trinidad age for 5 years in ex-bourbon barrels.
Aging takes place on the island of Barbados, taking advantage of the heat and specific humidity of the island. Allowing to offer the future rum a unique oxidation, excellent maturity as well as a high concentration of aromas.
The batches of aged rums cross the ocean to France to then be assembled by Cellar Master Jérôme Tessendier.
Its goal is to reveal the character of the terroir of the island of Trinidad using a unique technique. Assemble the different batches according to their various aromatic profiles: floral, fruity and spicy.
Then, the blend will mature in Jarnac (Charente) in “medium grain” French oak barrels to extract lightly roasted and spicy aromas. Finally, as a final subtlety, the rums will be refined in “fine grain” oak barrels to create a delicious and harmonious finish.
Refining in the Jarnac cellars takes place for 24 months.
Saison Triple Cask Trinidad will then be gradually reduced to 48%, without added sugar.
