After exploring the islands of Jamaica, Trinidad and Tobago and Martinique, this time the latest calvados from the Drouin house were worked in old Foursquare casks for the 8th edition of the Christian Drouin Experimental range.
Foursquare is an iconic, family-owned distillery in Barbados. It produces rums with great aromatic expression that are recognized worldwide.
A 17-year-old Pays d'Auge Calvados was placed in eight French oak casks that had previously held rums from the Foursquare distillery. After 17 months of maturation in these casks, the Calvados was removed and placed in freshly retoasted casks for a further three months before being bottled. The rum casks imparted notes of brown sugar and vanilla, giving the Calvados exceptional complexity and depth. However, upon removal from the casks, I felt that an additional three months in freshly retoasted casks would further enhance the roundness and structure of this exotic marriage, achieving a perfect balance between these two worlds."
