The tasting

A sparkling golden robe that blends with green reflections, which is indicative of great white wines.

On the nose, one discovers notes of white flowers and bergamot. The palate is both rich and long, in perfect balance, with restrained power. The warmth of the vintage is palpable; this is evidenced by the round and smooth aromas of toasted hazelnuts and caramel.

The finish is chalky, carried by a very fine, delicate bubble that gradually disappears, a signature of Salon.

The service and the food and wine pairings

Best enjoyed slightly chilled, between 13° and 15°. Its extreme purity complements its pronounced minerality; it pairs well with salmon terrine, langoustine tartare, or pig's trotters with sweetbreads.
