What exactly is the difference between aging carried out in a tropical climate and aging carried out in a continental climate?

The SVM brand set out to answer this question... As the acronym indicates, this brand is in fact an alliance between the brands Scheer (Dutch merchant), Velier and Main Rum (which belongs to Scheer) .

The idea was therefore to provide two versions of the same rum: the first, resulting from aging in the distillery cellars, and the second, from aging in Europe: we could thus compare the result, in terms of taste. Well, based on experience, the difference is obvious!

Here we discover the MMW Wedderburn vintage, resulting from 11 years of maturation in Jamaica in the cellars of the Monymusk distillery. It results from the blend of vintages from 2007 and 2008, and displays a high ester level (315.6 g/Ho).

Its aromas of oak, plum, salted butter caramel and exotic fruits create a harmonious accord, just as delicious as the one that combines notes of toffee, banana and spices, punctuated with a rare touch of saffron. !
