“ Covenant ”: an English term with multiple meanings: an alliance, a commitment, an agreement… And indeed, the flavors of this rum compose a perfectly harmonious aromatic accord!
It is a rum originating from Barbados, an island that irresistibly evokes a distillery: that of Foursquare , the distillery founded by Richard Seale .
This aged rum is quite simply the oldest ever produced by this distillery! This underscores its prestige and authority…
It results from a blend of vintages from 2004 and 2005, distilled in double copper pot stills and twin column stills, and aged in old ex-Bourbon barrels of American white oak.
Its beautiful mahogany color conceals captivating scents of pineapple, raisins and mango, which gradually give way to aromas of cocoa, caramel and candied ginger.
At the palate, caramel, plum jam, candied orange and dark chocolate make up this gourmet combination we were talking about.
The finish opens with original notes of burnt rubber, black tea and eucalyptus.
A great aromatic richness!
