Saison Rum expression resulting from a meticulous selection made from distillates from 3 distinct terroirs in the Caribbean islands of Barbados, Trinidad and Jamaica.
With this rum, the Cellar Master aimed to highlight the unique character of these terroirs in perfect balance. This is all thanks to the richness and power of the molasses distillation process in pot stills.
Nevertheless, they are associated with the finesse and lightness of column-distilled sugar cane.
The selected rums that make up Saison Rum have primarily aged up to 5 years in American white oak barrels.
The aging process takes place in their original terroirs, benefiting from the heat and specific humidity of the Caribbean islands.
This will notably give the future rum a unique oxidation, excellent maturity, and a high concentration of aromas.
Then the different batches of aged rum travel across the ocean to France to be then blended by the Cellar Master Jérôme Tessendier.
His goal in creating Saison Rum is a unique harmony using cognac production methods. By blending different terroirs according to their diverse aromatic profiles: floral, fruity and spicy.
The blend is aged in old French oak barrels located on the banks of the Charente for 9 months.
This refining process will ensure stability and balance while bringing a rancio note, characteristic of old cognacs.
Saison Rum then gradually reduced to 42%; without added sugar.
