History/Origin : The Espadin agave used for this mezcal is carefully selected and harvested at 8 years old, after reaching its optimal maturity. Its hearts are slowly cooked in volcanic rock pits for several days, then crushed with a tahona stone. The agave juice is then fermented in oak vats and double-distilled in copper pot stills, using traditional methods to guarantee exceptional quality.
