WINEMAKING : The grapes are hand-harvested into crates, with partial destemming. Alcoholic fermentation takes place in temperature-controlled tanks at 28-33°C. Maceration lasts 15-21 days. Moderate punch-downs and pump-overs are performed.
AGING : Aged in barrels for 15 months
A refined St. Joseph, combining structure and aromatic complexity. Fruity notes (blackcurrant, blackberry) mingle with spices in its early years. An elegant wine that can be enjoyed young for its fruitiness, or aged for 5 to 7 years, and up to 10 years or more for certain vintages.
It was in 1990 that Frédéric Boissonnet took over the family estate.
The 17th-century house, located in Serrières (Ardèche) in the heart of the Northern Rhône Valley, hides vaulted cellars, lovingly restored, where Saint Joseph and Condrieu wines are aged.
On the steep slopes overlooking the Rhône Valley, the estate works nearly 11 hectares of vines (10 hectares in AOC Saint Joseph and 1 hectare in AOC Condrieu) with the utmost respect for the terroir and control of yields.
