The Estate: Established in 2005, Inés Racault took over the management of this 40-hectare estate from her father, Benoît Proffit. Located in the heart of the Coteaux du Layon appellation, on the Saumur-Cholet axis, the estate also owns vineyards in Saumur-Champigny in Parnay. The diversity of the soils, whether schist, clay-limestone, or sandy-chalk, gives the estate's wines their distinctive character.
Grape variety: 100% Chenin
Winemaking: Hand-harvested from mid-October to the end of November, the Coteaux du Layon Clos des Bâtes is a cuvée made from 6 to 8 selective harvests. The grapes are selected, sorted, pressed, and then ferment in vats for almost a year. The wine is filtered before bottling.
Tasting notes: The wine has a luminous, golden hue, a powerful and expressive nose of candied fruit, apricots, and dates. The palate is smooth with a refreshing finish.
Serving temperature: 10 to 12°C
Serving suggestions: Ideal as an aperitif, it will perfectly complement your foie gras, black pudding with apples, sweet and savory exotic cuisine, strong cheeses such as Époisses, Munster, Roquefort, with warm tarts like Normandy tart or Tarte Tatin, and as a snack with waffles.
Storage: Best enjoyed now, it will keep for over 10 years
