One of the rare American distilleries dedicated to single malts, works locally while seeking to assert its taste. The particularity of this American whiskey is the use for aging in a Garry oak barrel (Quercus garryana). This species from western North America is protected and it is therefore necessary to wait for the trees to fall in order to make barrels (after 3 years of drying). This Fifth version offers the combination of two types of malt (Washington Select Pale Malt and Bairds Heavily Peated Malt) and maturation in first-fill bourbon barrels (64%) and virgin Garryana oak barrels (36%).
Nose : A woody note that is both dry and sweet launches the tasting, quickly joined by cereals and touches of smoked chocolate.
