Terroir : clay-limestone soils, vineyard of Gallo-Roman origin, benefiting from a rare meso-climate, as it is composed solely of hillsides facing south-southeast (slightly towards the rising sun).
Winemaking : The grapes are harvested at optimal ripeness. Viticulture is traditional and meticulous. Aging takes place in barrels in a temperature-controlled (non-air-conditioned) cellar, with regular oxygenation (through the barrels, within the barrels themselves, or through frequent racking). The key is not simply "exposure to oxygen," but rather its interaction with the molecular structures, allowing flavors to develop without oxidation.
