Nose : refined, complex. Extremely delicate with notes of nougat and coconut, it quickly becomes floral (honeysuckle, iris). With aeration, it reveals considerable tension and minerality. Mirabelle plum and lemon dominate the aromatic profile. Much later, new dried fruits (walnut, almond) accompany strong spices (grey pepper, star anise).

Palate : Full of maturity and freshness. It begins by creating a thick layer of mousse around the palate. The mid-palate is particularly fruity (apricot peach, mango, strawberry, persimmon). With incredible delicacy, it becomes increasingly pastry-like (fruitcake) and candied (prune, fig).

The finish is long and nuanced. It lingers endlessly on the palate without losing any intensity or power. Citrus fruits (oranges, clementines, kumquats) are abundant. Their slightly tart juice is a pure delight. Gradually, a thin layer of toffee coats them. The retro-nasal aroma is licorice and gently spiced (cinnamon). The empty glass retains all the aromas of the initial nose and reveals, in addition to candied fruit, a very slight trace of smoke.
