Sourced from the La Salabotte plot, planted exclusively with white sugarcane on black volcanic soils, this cuvée reflects the vibrant identity of its terroir. A 5-day fermentation, potential gentle micro-oxidation, and then column distillation… everything is designed to preserve the minerality and purity of the juice.
Nose : Pronounced vegetal freshness – fresh sugarcane, cut grass, a hint of coconut
Palate : Straight attack, with aromas of kiwi, coconut water, subtle licorice and light salinity
Finish : Long, clean, with a mineral tension and a persistent herbaceous note
✅ A micro-terroir highlighted : harvest from the same field, rare and traceable
✅ Single varietal (white cane) : pure and legible expression of the varietal
✅ 52.5% ABV column still : controlled strength, without compromising on aromatic intensity
✅ Limited edition : only 3,500 numbered bottles available
