Distilled during the summer of 2010, this whiskey from the Daftmill distillery is the latest expression made from Optic barley .

Although grown on their own land since the 1980s, this variety was gradually sidelined in favor of more indigenous barley .

Once harvested, the barley is then malted, dried then transformed into “Grist” before being distilled and aged in oak barrels on site, that is to say in the farm's own shed. This is a blend of 25 first-fill barrels that previously contained bourbon.
