BELLEVOYE BLANC, French whiskey matured in Sauternes barrels.
Sauternes wines are renowned for being the best sweet wines in the world. Indeed, the exceptional microclimate of the appellation during the harvest (cool nights and humid mornings) develops noble rot on the grapes, causing concentration of sugars and candied aromas.
The barrels used in the final aging come from a famous Sauternes classified growth. To guarantee the freshness of the aromas, we empty the wine from the barrel and immediately fill it with whiskey. Thanks to this method, we do not use sulfur, used to preserve empty barrels between these two stages. We thus avoid bad tastes transferred to the whiskey by the sulfur wicking of the barrels.
Profile: balance, elegance, roundness and aromatic complexity.
Aging: 3 to 8 years in French oak barrels in each of the three selected distilleries. Then secondary aging, between 9 to 12 months post-assembly in new French oak barrels in Charentes.

Tasting
Nose : The nose reveals a wide aromatic palette. Notes of dried fruits (currants, apricot and date) mingle with notes of spices (vanilla, cinnamon, ginger) and acacia honey. The sweet bitterness of malted barley harmonizes with the aromas of orange peel and marmalade.
Mouth : The palate is delicious. It has the flavor of a very ripe and juicy fruit. The texture is silky and delicate.
Finish : The finish is coated and accompanied by notes of almond and hazelnut.
