Nose : Fresh, elegant. On the first nose, notes of white fruits (pear, apple), aromatic plants (sage, verbena), vanilla and candied lemon sit alongside malted aromas of remarkable purity of expression. Allowed to aerate, with a lot of naturalness, the aromatic palette gradually reveals itself as peppery, liquorice and honeyed (acacia). Then, taking decidedly fruity paths, she places a basket full of Williams pears at the front of the stage.
Mouth : Lively, racy. Herbaceous (cut hay, straw) and milky (coconut, almond), the attack on the palate is also spicy (ginger, coriander) and slightly medicinal (tiger balm). Continuing, the mid-palate harmoniously evokes a green barley field. At the end of the palate, flavors of yellow melon, white peach and almond add a fruity dimension to the taste palette.
Finish : Long, subtle. At the start of the finish, notes of eucalyptus, rosemary and savory underline the empyreumatic and freshly herbaceous character of this Waterford. In the aftertaste, vanilla flavors (flan) extend the tasting time to infinity, which ends in a deliciously malty, fruity (pear, mirabelle plum) and floral (lily, lavender) retro olfaction. Rich in dry extracts, the empty glass reveals notes of porridge, iris concrete as well as red fruits (raspberry, strawberry).
