Winemaking : The grapes are hand-harvested and whole-cluster pressed. After settling, the must is transferred to oak barrels (approximately 20%) for alcoholic fermentation, which lasts about fifteen days. From November to May, the wines are gently turned to resuspend the lees and add body. Malolactic fermentation then begins. The wines are fined and filtered before bottling.
