Geographical location and soil

Predominantly clay-limestone soil.

Harvesting and vinification of Crémant d'Alsace Brut Prestige

The grapes are harvested exclusively by hand. After initial fermentation in vats, the wine is bottled, and then, naturally, with the addition of the liqueur de tirage, a second fermentation takes place in the bottle: this is the prise de mousse (sparkling wine production). This method, known as the "Traditional Method," is combined with aging on lees for 15 to 18 months.
