This wine comes from the great clay-limestone terroirs of Chinon's Left Bank. These soils give the wine a beautiful elegance and a long, fresh, and delicate aromatic finish. Hand-harvesting preserves the grapes, as does gravity-flow fermentation. The wine is then aged for 12 months in demi-muids (600-liter barrels) in our cellar beneath the fortress. Total SO2: Less than 30 mg/L
