2022 marks a new event with the release of the first two peated editions from the Waterford distillery, made from not only barley but also 100% Irish peat. This is the first time in generations that we can find Irish whiskeys made in this way, marking a return to a certain tradition, since peat was for centuries the main means of heating on the island. This edition is a single farm, since the barley comes from Ballybannon farm, while the peat was harvested in County Kildare. This single malt peated at 47 ppm combines a strong smoky character, with maritime and earthy notes, as well as a very interesting pastry structure (lavender honey, apple pie, buttery notes).
