The Saint Nicolas de Bourgueil vineyard is located in the heart of the Loire Valley, within the Anjou Touraine Regional Natural Park. The appellation covers 950 hectares on gravelly terraces and clay-limestone slopes. The "Domaine" cuvée is produced from the estate's various vineyards; it is the most widely distributed and has established the winery's reputation.
Grape variety - 100% Cabernet Franc
Harvest and Winemaking: The harvest is done manually and then the grapes are sorted grain by grain at optimal ripeness.
The winemaking process is carried out traditionally in wooden vats. We then perform foot treading twice a day for about ten days, and maceration is subsequently extended for 10 to 12 days to complete the extraction. After racking and pressing, malolactic fermentation takes place, again in wooden vats. Alcoholic fermentation then begins naturally.
Aging: in wooden casks during the winter. Light filtration precedes bottling.
